Pulut Udang
Glutinous Rice Ingredients :
300gm glutinous rice (soak for at least 4 hours, steam until cooked)
100 gm thick coconut milk
Some salt
Filling (A) : (Grind all until fine)
2 tbsp Chilli Boh
4 shallots
2 pips garlic
1stalk lemon grass
1small piece of turmeric
Filling (B) :
100gm grated coconut
1 tbsp dried shrimps (rinse quickly to remove dirt)
Seasoning :
1 ½ tbsp sugar
1tsp salt
Wrapping ingredients :
Some banana leaves (baked until soft, cut into 16cmx5cm)
Method :
1. Mix glutinous rice, thick coconut milk and salt together and mix well. Set aside.
2. Heat oil in wok. Add in filling A and stir fry until fragrant. Then add in filling B and stir fry. Lastly add in seasoning and stir to mix well.
3. Take 2 tbsp of glutinous rice, spread on the banana leaf to form a long strip. Put filling on top of the middle of glutinous rice. Roll it and wrap to form a long cylinder shape. Fold the two ends and use staple to pin up the two ends.
4. Repeat the same until used up all fillings.
5. Bake all in oven until fragrant and banana leaf is slightly burnt.
6. Remove and serve.
